2018 is all about being healthy and making better choices when it comes to my nutrition. I've always been known as a picky eater, and struggling with body issues didn't making eating any easier. I wasn't that educated in nutrition, I hated most vegetables, but I loved sugar. I ate pretty crappy, even for a collegiate athlete. Even though I knew what I needed to eat to fuel my body, I struggled. My palette was basic and I lived off the same few foods. It was rough. I wasn't fat by any means, but I was "skinny-fat". I was working out and lifting and not giving my body the proper nutrients I needed. My body was strong but not lean or toned. My skin was a disaster, and I looked bloated...constantly.
When I graduated from college and landed my first teaching job, I dropped a ton of weight due to stress and exhaustion. I was skinny, but I had lost a ton of muscle, and I wasn't eating much better. I wasn't strong the way I used to be and I was getting injured during sports. Something needed to change.
About 2 years ago, I got back into the gym, and started lifting heavy. I knew that I wasn't going to get the body I wanted without eating well. That's when I realized I needed to truly start paying attention into what I was putting into my body. It's the only body I've got so I might as well treat it well. I cut out sugar, not 100% because I couldn't survive without chocolate, duh. I started incorporating more fruits and vegetables, as well as other proteins. I cut down on the amount of processed foods I was consuming as well. I also got myself into the kitchen and started cooking for myself. Now, keep in mind, this is when I moved into my apartment and lived alone. I was in survival mode!!
Now, I am more comfortable in the kitchen than I ever have been and I actually enjoy cooking! Mom, I know you are smiling huge right now because you kept telling me I'd love it. (Who would have thought!?) I have purchased numerous cookbooks and can actually replicate the recipe pretty well, if I do say so myself.
I am cooking delicious recipes that are healthy as well! I find that I can incorporate the foods I enjoy and change-up the flavoring and make them unique.
I am excited to make a zesty shrimp and avocado salad tonight for Scotty and chicken chili tacos in the slow cooker tomorrow. I'm loving this new lifestyle I have created for myself and have been feeling and seeing differences in the gym.
